About Clos Fourtet:

Clos Fourtet, established on the site of a Roman fort (“un fourtet”), is located on a limestone plateau of Saint-Émilion. After being further developed by Bordeaux families such as the Ginestets and the Lurtons, it was acquired in 2001 by Philippe Cuvelier and his son Matthieu, who undertook in-depth work on the vineyard, including the practice of biodynamics on 15 hectares.

About Weingut Burg Ravensburg:

The winery is located in the municipality of Östringen-Tiefenbach (Kraichgau region) in the German wine-growing region Baden. It was founded in 1960 by Albert Heitlinger, and today is owned by “Weingüter Heitlinger & Burg Ravensburg GmbH”, whose owner is Heinz Heiler.

About Domaine de l’A:

Located in the town of Sainte Colombe, Domaine de L’A was created in 1999 and extends over clay-limestone hillsides. Today, the vineyard covers over 12 ha, each plot of which receives appropriate work, in order to strengthen its balance and to cultivate its difference, a source of complexity in the final assemblage of the wine.

About Château Beauregard:

Château Beauregard, whose history dates back to the 12th century, was acquired in 2014 by the Moulin and Cathiard families. The estate has undergone significant transformations, notably the construction of a new vat room, but also the acquisition of Château Pavillon Beauregard in Lalande de Pomerol, Château Bastor Lamontagne in Sauternes and Château Saint Robert in Graves.

Jean-Pierre Giraud is a world-renown expert of wood aging, with an international career that spans 40 years. He is a former General Manager and Commercial Director of Chêne & Cie in charge of four top-ranking cooperages and fifteen subsidiaries in different wine producing countries. Referent for Collège Culinaire de France and Permanent Member of Grand Jury Européen, he is the owner of Jean-Pierre Giraud Wood Wine & Spirit Consulting.

In this presentation Jean-Pierre Giraud explains what are the influences of main components of the wood in the wine (red and white) and the keys to select the right wood components for the right purpose, to get smooth finish, length, complexity, elegance or savory characters. How to target the best wood and components for each individual wine and enhance the identity of the wine in question. 

This is technical presentation followed by extensive Q&A session.
